
With all the wonderful sentiment that surrounds Easter, there is one potential downside: all the unhealthy (yummy) candy that you just can’t seem to escape. This year, try shaking things up a bit with this healthy Easter recipe instead.
Healthier Peanut Butter Eggs
The Peanut Butter Egg we’ve all come to know and love is loaded with refined sugars and preservatives among other less-than-healthy ingredients. But we’re not saying you shouldn’t enjoy one of your favorite Easter treats! Instead, try this healthier version, reimagined by and adapted from Detoxinista. Bonus: it’s made using Skinny Coconut Oil!
Ingredients
Makes 6 eggs
1/2 cup organic, natural peanut butter (creamy or crunchy)
2 tablespoons pure maple syrup
1 tablespoon coconut flour
1/4 teaspoon of sea salt (only if your peanut butter is unsalted)
1/2 cup dark chocolate chips
1 teaspoon Skinny Coconut Oil
Directions
- In a medium mixing bowl, combine the peanut butter, maple syrup, and coconut flour. (Also include the salt if you’re using it.) Mix well, until the batter forms.
- Use a spoon or small ice cream scooper to scoop the batter into six balls. Then, use your hands to shape the balls into egg-like shapes. Arrange the eggs on a plate lined with parchment paper, and place the plate in the freezer to set.
- While the peanut butter eggs are setting in the freezer, melt the dark chocolate chips in the microwave using a wide, shallow microwave-safe bowl. Microwave at one-minute intervals, stirring in between the microwaving bursts. Then, stir in the Skinny Coconut Oil.
- Remove the peanut butter eggs from the freezer, and dunk each one into the chocolate mixture until they are completely coated. Return the chocolate covered pieces to the parchment paper, and spoon any additional chocolate over the tops for a thicker chocolate coating.
- Return the now chocolate coated peanut butter eggs to the freezer and allow them to set in the freezer for at least 10 more minutes before serving. Note: It’s best to serve them directly from the freezer so that they do not soften and the chocolate does not melt.
