Coconut Oil Chocolate Chip Cookies

It maybe surprising to some but chocolate, when taken in moderation, can be good for you (especially when you add coconut oil!). Chocolate, especially the dark version, has strong antioxidants that are good for your body!

Chocolate chip cookies (when eaten in moderation) are a great snack for both kids and adults alike! Make it healthier by using coconut oil instead of butter – it tastes better and you wouldn’t even notice its coco nutty taste. Coconut oil has the good kind of fats you need to burn more fats in your body. And it’s very easy to incorporate into one’s diet too.

For baking, simply substitute butter with coconut oil in a 1:1 ratio – very simple and easy to remember. People who eat the raw food diet use extra virgin coconut oil because it’s a plant-based 100% whole food (raw). Skinny Coconut Oil is extra virgin coconut oil.


  • 1/2 cup Skinny Coconut Oil
  • 1/2 cup packed brown sugar
  • 1/2 cup sugar (You can use stevia as a replacement for sugar)
  • 1 large egg
  • 1 tsp vanilla extract
  • 3/4 cup whole wheat flour
  • 3/4 cup all purpose flour
  • 3/4 tsp baking powder
  • 1/2 tsp baking soda
  • pinch of salt
  • 1 cup chocolate chips (semisweet or milk chocolate)


  1. In the bowl of a stand mixer, beat coconut oil and sugars together until fluffy. Beat in egg and vanilla.
  2. Preheat oven to 350.
  3. In another bowl combine flours, baking powder, baking soda, and salt.
  4. Slowly mix into wet mixture. Stir in chocolate chips.
  5. Scoop by rounded tablespoon onto a cookie sheet lined with parchment paper. Bake at 350 for 10 minutes.
  6. Let cool for several minutes before transferring to a cooling rack.
